The surrounding waters of the Indian Ocean provide the islands with an abundance of fish and seafood which are staple to the local cuisine, along with fruits and vegetables from local farms and gardens. Essential ingredients and spices such as coconut, cinnamon, nutmeg or lemongrass are found growing naturally in the pristine inland forests and are used to infuse the dishes with a unique blend of flavors.
